confiture & marmalade

Depuis 2002 aux États-Unis où nous commencions à cuisiner pour le grand public, nous avons beaucoup affiné nos recettes – on aime jouer avec les saveurs. La liste évolue sans cesse mais elle inclut certains des favoris suivants:

  • red plum and apple with rose water
  • rhubarb with clementine and ginger
  • strawberry lavender
  • raspberry with cardamom and orange zest
  • peaches and apricots in saffron syrup
  • sour cherries in vanilla syrup (seasonal – july/august)
  • peach ginger
  • blueberry rhubarb with vanilla bean
  • blueberry and elderflower with lemon
  • whole preserved strawberries with lime and hibiscus
  • black plum and star anise
  • blackout (blackcurrant black raspberry)
  • apple maple jam

marmalade

  • meyer lemon rosehip marmalade (seasonal – nov/dec)
  • pink grapefruit marmalade with honey and cloves
  • cranberry ginger and clementine marmalade
